This keto chocolate cake recipe is intensely rich & moist with a light and tender crumb. The perfect low carb dessert for birthdays or parties!
KEY INGREDIENTS
Almond Milk
Almond Flour
Eggs
Coconut Flour
Butter or Ghee
Cocoa Powder
Monk Fruit Sweetener
CAKE
BUTTERCREAM
Coconut Oil
Almond Milk
INSTRUCTIONS
Mix milk & apple cider; set aside for 5 minutes to curdle.
CAKE
In a separate bowl; add the almond flour, coconut flour, cocoa powder, espresso powder, sweetener, baking powder, baking soda and salt and whisk to combine
add eggs, coconut oil & vanilla; beat until smooth & add curdled milk.
Transfer to cake pans; and bake in preheated oven for 18-25 minutes.
In a stand mixer; beat butter or ghee then add powdered sweetener & cocoa powder. Add vanilla, milk and salt.
FROSTING
Beat until fluffy; on a medium speed for 2-3 minutes.
Start with cake; then layer with buttercream, repeat with second cake & use remaining frosting on top & sides. Top with fresh berries.
