KETO GINGERBREAD COOKIES

LOW CARB/PALEO

Keto Gingerbread Cookies – gingerbread men cookies are a classic holiday favorite perfect for baking season. Made with low carb ingredients and perfectly spiced with cinnamon, ginger and molasses.

KEY INGREDIENTS

- Almond Flour - Coconut Flour - Golden Monk Fruit - Cinnamon - Ginger - Cloves - Nutmeg - Xantham Gum - Unsalted Butter - Molasses - Almond Milk

DOUGH

Whisk together almond flour, coconut flour, cinnamon, ginger, cloves, nutmeg, salt, baking soda, and xanthan gum together until combined.  Cream together the butter with monk fruit sweetener until light and fluffy. Add the molasses then slowly add the dry ingredients until combined.

ROLL

Form the dough into a ball and refrigerate for at least 30 minutes.  Remove from fridge and roll between 2 large sheets of parchment paper on a large baking pan.

CUT

Place baking pan in the fridge or freezer.  Line 2 large baking pans with parchment paper.  Remove dough sheet from freezer, peeling away parchment paper. Cut into shapes and transfer to lined pans.

BAKE

Place sheets into freezer and preheat oven to 325°.  Bake one at a time  12-15 minutes, rotating halfway through.

DECORATE & SERVE

Allow to cool on pan for 25 minutes, then move to a wire rack to cool completely. Decorate as desired and enjoy!
