Loaded Vegan Nachos

Preheat oven to 400°F. Line a baking sheet with parchment. Add the tomatoes, oil, salt, pepper, and red onion to a bowl and toss. Heat oil in a pan on medium heat. Crumble tofu into the pan and cook until it starts to get crispy.

Add the smoked paprika, chipotle chili, garlic powder, salt, pepper, and sauté for a couple of minutes. Remove from heat. Mash avocados and add the lime juice, salt, and pepper to a bowl. Put some of the tortilla chips on the baking sheet and sprinkle with cheese.

Put the pan in the oven until cheese melts then add the tofu on top.  Top with the salsa, sour cream, and the guacamole.

Cut some lime slices and add the red onion on top.  Serve immediately with jalapeno and coriander.
