Black Bean and Corn Salad

This zesty Black Bean and Corn Salad is packed with protein-rich black beans, sweet corn, and a medley of colorful vegetables, this Southwest-inspired dish is bursting with flavor and perfect for summer gatherings.

Ingredients

Dressing

  • 1/3 cup extra-virgin olive oil
  • 2 tbsp fresh lime juice
  • 1-2 tbsp red wine vinegar or balsamic vinegar
  • ¼ - 1/2 tsp maple syrup , or sub with preferred sticky liquid sweetener. Use sugar-free maple syrup for lower sugar.
  • ⅓ - 1/2 tsp chili powder or cayenne
  • ½ tsp ground cumin
  • 1/2 tsp garlic powder or ½ clove finely minced garlic
  • 1 tsp finely chopped cilantro
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Salad

  • 1 cup canned or cooked black beans drained and rinsed
  • 1 cup canned or cooked black-eyed peas drained and rinsed
  • 1 small red onion finely chopped
  • 1 cup fresh or defrosted frozen corn kernels fresh
  • 1 cup cherry tomatoes quartered
  • 2 bell peppers chopped
  • 1 avocado chopped
  • 1 jalapeño rib removed, seeded and finely chopped
  • 2-3 tbsp fresh cilantro chopped
  • Tortilla chips of choice for serving - we like Siete for grain-free

Instructions

  1. Dressing: Add all the ingredients for the dressing into a small bowl or a resealable jar. Whisk or shake until well combined. Adjust seasonings as needed. Set aside or chill in the fridge until ready to use, shaking or whisking prior to using.
  2. Assemble: In a large bowl, add the salad ingredients side-by-side: black beans, black-eyed peas, red onion, corn, tomatoes, bell peppers, avocado, jalapeno and half of the cilantro.
  3. Pour desired amount of the dressing (you may not need all of it) over the salad and gently toss to combine. Season with more salt and black pepper, as needed. Garnish with a little bit more fresh cilantro, if desired.
  4. Serve with tortilla chips and enjoy.
