These Avocado Egg Rolls are a healthy twist on the Cheesecake Factory Egg Rolls made with gluten-free egg roll wrappers, creamy avocado and baked in the air fryer to crispy perfection! They're a fun and tasty appetizer or healthy snack and are dairy-free with vegan, grain-free, low carb, paleo and keto options.
In a large bowl, add the avocado and gently mash using a fork or potato masher.
Add tomato, sun-dried tomatoes, red onion, cilantro, lime juice, salt and black pepper and mix to combine.
Make the filling and dip ahead of time and store separately in an airtight container in the fridge for up to 3 days.
