BIRTHDAY CAKE COOKIES

Loaded with birthday cake flavor these deliciously soft, grain free & gluten free birthday cake cookies use a few pantry staples and some optional sprinkles.

KEY INGREDIENTS

Coconot oil

Maple Sugar

Vanilla Extract

Maple Syrup

Almond Flour

Coconut Flour

Sprinkles

INSTRUCTIONS

In a medium bowl:  Mix coconot oil, coconut sugar, maple syrup & vanilla.

Add baking powder: almond flour, coconut flour, cinnamon & sprinkles.

Roll into dough balls: then place on lined baking sheet. Press down each ball to form a disk.

Bake for 12-13 minutes then drizzle with desired icing & top with sprinkles.

Melted coconut oil with make your cookies fall flat. Use softened instead.

Do not over bake - remove promptly when edges turn golden brown.

TOP TIPS

Do not sub the flours with almond meal or shredded coconut as they will cause crumbly cookies.
