BROCCOLI PASTA SALAD
KEY INGREDIENTS
Vegan Yogurt
Apple Cider Vinegar
Olive Oil
Maple Syrup
GF Pasta
Broccoli
DRESSING
SALAD
Poppyseeds
Salt & Pepper
Grapes
Red Onion
Cucumbers
Radishes
Or use Primal Kitchen Ranch Dressing
Vegan Feta
Pecans
Dried Cranberries
For the pasta; cook according to package instructions. Drain & rinse - set aside.
FOR THE SALAD
Combine all the ingredients together in a resealable jar. Shake well and set aside
FOR THE DRESSING
In a large mixing bowl, add the cooked pasta, broccoli, red onions, cucumber, radishes & half of the feta to the bowl. Pour in the dressing and toss evenly coat. Add salt & pepper.
ASSEMBLE
Cover bowl and chill in the fridge for at least an hour. Toss in grapes, pecans, cranberries and more crumbled feta before serving.
For meal prep divide into lunch containers & store in fridge for up to 4 days.
TOP TIPS
For the dressing, you could also use lemon juice or distilled vinegar instead of apple cider vinegar.
Instead of pure maple syrup you can also use Lakanto sugar-free maple syrup, date syrup, coconut flower nectar syrup, liquid monk fruit or honey if not vegan.
