Carrot cake granola makes the perfect healthy snack. Refined sugar-free and made with grated carrots and warm spices to satisfy any carrot cake craving.
Preheat oven to 300 degrees F. Line a baking sheet with parchment paper.
In a large bowl, stir together the oats, ground flaxseeds and spices. Add the maple syrup, coconut oil, apple juice and vanilla extract and mix until thoroughly combined. Fold in the grated carrots.
Spread the mixture out evenly onto lined baking sheet.
Bake in preheated oven for 40 minutes, rotating the pan after 20 minutes. Do not stir as this breaks up the clusters.
