Avocado Toast (3 Different Ways!)

This avocado toast recipe includes 3 different variations, and they are all so easy to create! Healthy and simple to make using basic ingredients, this breakfast or lunch option will steal the show!

Ingredients

Classic Avocado Toast

  • 1 slice your favorite gluten-free, paleo or keto bread , toasted
  • 1 avocado
  • salt
  • pepper
  • 1/3 cup baby spinach, arugula or any other spring mix greens you like

Avocado Toast with Egg

  • 1 slice your favorite gluten-free, paleo or keto bread , toasted
  • 1/2 avocado
  • 1 egg fried, hard-boiled or scrambled
  • 5 grape tomatoes vertically sliced
  • salt
  • pepper

With Bacon

  • 1 slice your favorite gluten-free, paleo or keto bread , toasted
  • 1/2 avocado
  • 2 slices bacon cooked
  • salt
  • pepper
  • 1/3 cup greens such as arugula
  • 3 grape tomatoes

Instructions

Classic Avocado Toast

  1. Toast a slice of bread. While the bread is toasting, scoop out the flesh of one pitted avocado while making sure to get really close to the skin.

  2. Set the scooped avocado to the side.After the bread has reached the desired level of crisp, mash the avocado on toast with a spoon. Add salt and pepper.

  3. Top the toast with preferred greens, such as arugula!

With a Fried Egg

  1. Toast a slice of bread. Scoop out the flesh of half an avocado. Vertically slice the grape tomatoes. Set aside.

  2. In the meantime, fry an egg in a frying pan drizzled with oil. We like to cook our egg over-easy, but the egg can be cooked any preferred way.

  3. Once the toast has reached preferred level of crisp, mash the avocado on the toast. Add salt and pepper and the sliced tomatoes to the toast.Top all of the ingredients with a cooked egg and enjoy!

With Bacon

  1. Preheat the oven to 350 degrees Fahrenheit. Roast bacon for 15 minutes or until crispy and dark brown. Remove the bacon from oven and toast the slice of bread.

  2. Vertically slice the grape tomatoes and half an avocado. Scoop the green flesh out of the fruit. Mash the avocado on toasted bread.

  3. Add salt and pepper.Add the tomatoes to the avocado mash in addition to two slices of bacon that have been broken in half. Add greens on top of the bacon and enjoy!
