Easy Pickled Onions

Ingredients

  • 1 onion peeled and thinly sliced
  • 3/4 cups apple cider vinegar with The Mother
  • 1 teaspoon sea salt
  • 1 garlic clove minced
  • 2 tablespoons maple syrup or Lakanto Sweetener
  • 1 tablespoon parsley freshly chopped

Instructions

  1. Peel and thinly slice an onion. Set aside.

  2. In a small saucepan, combine apple cider vinegar, salt, maple syrup or preferred sweetener, and garlic over medium heat. Bring to a gentle simmer.

  3. Remove from heat. Place the sliced onions in a medium-sized bowl, and pour the hot vinegar mixture over the onions.

  4. Add the freshly chopped parsley and stir the ingredients together.Set a timer for 15 minutes to let the onions marinate.

  5. After 15 minutes, stir the onions and let soak for additional 15 minutes.
