Peel and thinly slice an onion. Set aside.
In a small saucepan, combine apple cider vinegar, salt, maple syrup or preferred sweetener, and garlic over medium heat. Bring to a gentle simmer.
Remove from heat. Place the sliced onions in a medium-sized bowl, and pour the hot vinegar mixture over the onions.
Add the freshly chopped parsley and stir the ingredients together.Set a timer for 15 minutes to let the onions marinate.
