Mexican Rice Skillet

ONE PAN

One Pan Mexican Rice Skillet is perfect for a busy weeknight taking as little as 30 minutes to make. Full of veggies, cheese, and all your favorite taco flavors.

KEY INGREDIENTS

Olive Oil

Onion

Corn Kernels

Garlic

Shredded Cheese

Long Grain White Rice

Canned Black Beans

Red Bell Pepper

Ground Turkey or Beef

Cumin Smoked Parpika Chili Powder Cayenne Pepper

Seasoning

INSTRUCTIONS

Saute Onions and garlic; over medium heat for 1 minute

Add bell pepper; and jalapeno then add ground meat and cook until brown.

Push everything to one side; saute uncooked rice for 1 minute.

Stir in remaining ingredients; then cook for 17-19 minutes.

Sprinkle with cheese; and remove from heat

Serve with desired toppings such as avocado, green onions, cilantro & sour cream.

Long Grain White Rice or Brown Rice can be used

Make a double batch to enjoy in school lunchboxes or work lunch bowls the next day
