Soft and chewy no-bake granola bars that combine the classic flavors of peanut butter and strawberry jelly with crunchy peanuts. They contain no butter and can be gluten free if you use certified gluten free oats.

I’ve always been a granola bar fan, but they can be expensive to buy at the store plus you never know what’s in them with the long list of ingredients.

Homemade Granola bars are easy to whip up and make a tasty breakfast or snack! I usually make a couple batches of different granola bars every week depending on what I have in my pantry.
They make great snacks for on the go and I like to pack them in the hubs’ lunch cooler so he can bring a few to work.

These Chewy No-Bake Peanut Butter and Jelly Granola bars were one of the flavors I made a few weeks ago. They taste just like a classic peanut butter and jelly sandwich folded into a sweet and savory granola.
They are made with NO butter and are loaded with oats, oat flour and peanut butter. There is a strawberry jelly filling layered in the middle and you can even use some to add a pretty drizzle on top.
I also threw in some flaxseeds for added fiber along with a little bit of honey to sweeten them up.
Since these are no bake, they’re easy to make ahead of time and store in the fridge until you’re ready to eat them.
I like them best chilled because they tend to soften up a little bit when they are left out at room temperature.

They are soft and chewy with a little crunch from the peanuts. The sweet and savory combination is SO good and it will be tough to resist having only just one.
If you are a fan of PB & J, these will easily become one of your favorite granola bars!
- 1 cup creamy peanut butter
- 1/3 cup honey
- 1/3 cup coconut oil
- 1/2 tsp pure vanilla extract
- 1/4 teaspoon ground cinnamon
- 2-1/2 cups old fashioned oats
- 1 cup oat flour You can grind your own in a food processor or substitute with quick oats
- 1/4 cup quick oats
- 1/3 cup peanuts
- 1 teaspoon ground flaxseeds optional
- 1/4-1/3 cup strawberry jelly for filling plus more for drizzling
- Line an 8 x 8 square baking dish with parchment paper or foil sprayed with cooking spray. Set aside.
- Add peanut butter, coconut oil, and honey to a large pot over medium-low to medium heat. Stir continuously with a spoon until smooth. Remove from heat and stir in vanilla extract and cinnamon.
- Add rolled oats, quick oats, oat flour and flaxseeds and stir until combined. Press half of the oat mixture into the prepared baking dish. Spoon the jelly across the top of the oat mixture and spread evenly. Spoon in the remaining half of the oat mixture pressing down gently with a spatula or your hands.
- Sprinkle the tops with peanuts or chocolate chips if desired. Press down lightly so the nuts will stick to the surface.
- Refrigerate for 2 hours or until firm and set. Remove from the fridge and cut into bars or squares. Store bars in the refrigerator, either in an airtight container with wax paper separating the layers, or individually wrapped in plastic wrap.
Granola Bars will keep up to one week in the fridge or up to two months in the freezer.
You can substitute any chopped nuts, seeds, chocolate chips and/or dried fruit for the peanuts or add them additionally.
