Italian Sausage Tomato Tortellini Soup is a hearty and comforting meal that’s easy to make on busy weeknights.
It’s a tradition that we had when I was growing up with my parents and I hope my kids will be able to pass on to their little ones.
With winter not too far away, soups become a weekly staple in our house. My kids are big soup fanatics so I love finding new recipes for them to gobble down.
To make this a complete meal, I also threw in a package of cheese tortellini, Italian sausage, garbanzo beans, and arugula. If you are looking for a meatless meal, you can totally leave the sausage out and sub in extra beans instead.
