An Easy Watermelon Treat
With the hot temperatures we’ve had so far, we cannot get ENOUGH of all things watermelon lately. One of my kids favorite thing to snack on is watermelon during the summer. They love watermelon as is but we finally had a chance to use some to make Watermelon Popsicles.
The great thing about making your own healthy ice pops is that you can customize them with any fruit you like or have in your fridge or freezer. Plus, you can make a double batch and store them wrapped up in the freezer until you need something tasty and refreshing to beat the heat.
Homemade watermelon popsicles make the perfect healthy treat that are naturally vegan, gluten free, paleo and refined sugar-free. These popsicles set up beautifully in the freezer and they are so convenient when you want a healthy frozen treat to cool down with.
Ingredients you need to make Homemade Watermelon Popsicles
These Watermelon Popsicles are not only refreshingly delicious, bu they are super simple to make and only require 3 ingredients:
- watermelon: be sure to choose a ripe and sweet watermelon that you cut into cubes or chunks.
- raspberries: fresh or frozen raspberries work. You can also make some yummy watermelon strawberry popsicles and swap the raspberries with strawberries.
- fresh lemon juice: adds a bright and refreshing flavor that compliments the flavor of the other two fruits. You can also sub with fresh lime juice if you like.
OPTIONAL: liquid sweetener of choice
Since I use in-season fruit that is sweet already, I don’t usually add any kind of sugar or sweetener but you can definitely add some to your liking if you prefer.
How to make Watermelon Popsicles
- BLEND: Add all the ingredients in a blender and puree until completely smooth.
- FREEZE POPSICLES: Pour into popsicle mold. and freeze for 4 hours, or until very solid.
- INSERT STICKS: Insert the popsicle sticks when the popsicles are partially frozen.
- RUN UNDER WARM WATER: When ready to eat, run molds under warm water for a few seconds to loosen, then remove pops from mold.
Variations:
Enjoy them as is or add a drizzle of melted dark chocolate for a little decadent touch.
Use strawberries, peaches or add some whole blueberries for a fun surprise.
Layer them with another flavor or some coconut milk.
How to store watermelon popsicles
Simply remove the ice pops from the mold and place them in a parchment lined airtight container or wrap them up with parchment paper and store in a large resealable freezer bag so they don’t break as easily or develop freezer burn.
How long can you freeze them
You can store watermelon ice pops safely as directly above in the freezer for up to 2 months.

- 3 1/2 cups fresh cubed watermelon
- 1 1/4 cups raspberries , fresh or frozen
- 2 tsp fresh lemon juice
- liquid sweetener of your choice*
- Add all the ingredients in a blender and puree until completely smooth.
- Pour into popsicle molds and freeze for 4 hours, or until very solid.
- If using popsicle sticks, insert the sticks when the popsicles are partially frozen.
*I used in season fruit and these popsicles were sweet enough for our family. Depending on your taste, feel free to add any liquid sweetener of choice: liquid monk fruit, maple syrup, sugar-free maple syrup, honey etc.
