How to make Avocado Egg Rolls
- Mash the Avocado: In a large bowl, add the avocado and gently mash using a fork or potato masher.
- Add in remaining ingredients: Add tomato, sun-dried tomatoes, red onion, cilantro, lime juice, salt and black pepper and mix to combine.
- Add the Filling: Working with 1 egg roll wrapper at a time, place each egg roll wrapper on a clean flat surface. Place each wrapper with the points facing up (like a diamond). Dip your finger or use a brush to brush along the edges of the wrapper. Fill each wrapper with about 2-3 tablespoons of avocado filling near the bottom third of the wrapper, being careful not to over fill.
- Wrap and Roll up tightly: Lift the bottom edge of the wrapper tightly over the filling, then fold in the right and left corners towards the center. Continue rolling up tightly until the top of the wrapper is reached. Repeat with remaining wrappers and avocado mixture.
- Spray with Oil and Cook in the Air Fryer: Spray the air fryer with oil spray. Working in batches as needed, place the egg rolls in the basket in a single layer and spray the tops of the egg rolls with the oil spray. Cook at 395 degrees for 6 minutes. Then flip the egg rolls and lightly spray with oil spray. Cook for an additional 5-8 minutes, or until golden brown and crispy, being careful not to overcook and burn.
- Garnish and Serve: Remove the egg rolls and transfer to a plate or serving platter. Garnish with freshly chopped cilantro and lime wedges. Serve with dipping sauce on the side.
Make the Dipping Sauce:
While the egg rolls are cooking, make the dipping sauce by combining the yogurt, mayonnaise, cilantro, jalapeno, garlic and lime juice in a bowl of food processor or a small blender. Season with salt and black pepper to taste. Blend until smooth and adjust seasonings to taste.
Can I Prep Them Ahead of Time?
Sure! If you’d like to prepare these air fried egg rolls in advance, make the filling and dip ahead of time and store separately in an airtight container in the fridge for up to 3 days.
The rolls can be made and assembled up to 3 days ahead of time and kept in an airtight container in the fridge. Air fry right before you serve them.
Tips for Success
Making avocado egg rolls in the air fryer couldn’t be easier! Here are some tricks so they come out perfectly every time!
- Choose a ripe avocado: Be sure not to choose an overly ripe or hard avocado. You want the avocado to be lightly soft with a firm gentle-touch but not feel mushy. For more tips on how to choose the perfect avocado and ripen an avocado, check out this post.
- Don’t Crowd the Air Fryer: Make sure you’re not putting too many egg rolls in the air fryer at once. It’s better to work in batches. If your rolls are too crowded, they won’t get as crispy.
- Rotate halfway: Be sure to flip the rolls halfway through the cooking process. This ensures crispiness all around!
- Wrap Carefully: Don’t overfill your rolls and try your best to wrap the rolls as tightly as you can in a gentle manner. Remember to assemble them on a slick surface that the papers won’t stick to.
Variation Ideas
We can’t imagine ever getting bored of these air fryer avocado egg rolls. Especially when there are so many variations to enjoy!
- Make Summer Rolls or Traditional Spring Rolls: Gỏi cuốn are typically filled with cooked shrimp, pork, vermicelli rice noodles and raw shredded cucumber, then served with Vietnamese fish sauce (nước chấm). If you eat meat and would like to take a more traditional approach to this dish, go right ahead!
- Are egg rolls gluten-free: Egg Roll wrappers are typically made with wheat flour. Make them gluten-free by using Mom’s Place Gluten-Free Egg Rolls & Wonton Wrappers, vegan and gluten-free puff pastry, coconut wraps or rice paper wrappers.
- Use Another Dipping Sauce: There are plenty of dips that pair beautifully with these rolls. Peanut sauce, hoisin sauce and sweet chili sauce are prime examples.
- Add Protein: Want to make these more filling? Add some chopped tofu or cooked chicken for some extra protein.
How to Store Leftovers
Store any leftover egg rolls in an airtight container in the refrigerator. They’ll stay fresh for up to 3 days.
The creamy cilantro sauce can be refrigerated in an airtight jar or container for up to 1 week.
Can you freeze these?
Yes! Crispy avocado egg rolls freeze beautifully both after assembling and after even after they are cooked! To freeze the egg rolls, place them in a single layer in an airtight container and store in the freezer for up to 3 months.
How to reheat
Reheat the egg rolls either in the microwave, air fryer or oven. You can reheat them directly from the freezer without having to thaw them out in the fridge.

- Air Fryer: Air fry at 325F for 2-3 minutes, or until crispy, flipping half way through.
- Oven: Bake at 350F for 8-12 minutes, or until warm and crispy, flipping half way through.
