- Baby Potatoes: Don’t forget to wash, scrub and dry them.
- Avocado Oil: Extra-virgin olive oil works too, though we prefer avocado oil – it contains healthy fats and supports skin and heart health!

Either red or golden baby potatoes will work well for this recipe. Baby potatoes are also known as “new potatoes,” as they’re harvested prior to reaching maturity. If you can’t find baby potatoes, cut regular red potatoes into small chunks and use those instead.

Roasting potatoes in the oven is about to become a thing of the past. The Air Fryer has got it covered!
Heat Air Fryer: If your Air Fryer requires preheating, heat it to 390°F
Cut Potatoes: Cut the potatoes in half, lengthwise, at the thickest area.
Season: Transfer the potatoes to a mixing bowl and drizzle them with the oil. Season them with salt, black pepper, garlic powder, onion powder, paprika and fresh herbs, tossing to thoroughly coat all of the potatoes.
Cook: Working in batches, add the potatoes to the Air Fryer basket, spreading them out in a single layer. Cook them for 10 minutes, then remove the Air Fryer basket and shake it to flip the potatoes. Continue to cook them for another 8-12 minutes, or until they’re crispy, golden and fork-tender. Repeat the cooking process with any remaining potatoes.
Garnish & Serve: Transfer your cooked potatoes to a serving bowl or plate and garnish them with more herbs, black pepper and lemon wedges. Serve them alongside your favorite dipping sauce.
