Ingredients you need
- Old-fashioned rolled oats: Be sure to use certified gluten-free oats as needed.
- Banana: You’ll need about 1 small ripe banana.
- Cashew butter: You can also sub with any nut butter, seed butter or tahini of choice. Also works with melted and cooled coconut oil or neutral oil of choice.
- Maple syrup: Optional but highly recommended if you prefer a sweeter cookie.
- Milk: You can use any unsweetened dairy-free (or regular) milk of choice.
- 1 tbsp plant-based plain or vanilla protein powder of choice
- Baking powder
- Cinnamon
- Chocolate chips: Use your favorite dairy-free (or regular) chocolate chips, chocolate chunks or chopped chocolate of choice.
How to make Air Fryer Oatmeal Cookies
Air Fryer Version: If your air fryer requires preheating, preheat to 360°F (or preheat oven to 350°F).
Oven Version: Preheat the oven to 350°F. Line a small baking sheet with parchment paper. Set aside.
- In a bowl, add the oats, banana, oil, maple syrup, milk, baking powder and cinnamon. Mix until well combined. Fold in the chocolate, leaving some for topping.
- Shape the mixture into a round ball and form into a cookie shape. Top with more chocolate chips.
Air Fryer Version: Lightly spray the air fryer basket with cooking spray of choice. Place the cookie in the air fryer basket. Air fry for 8-10 minutes, or until the cookie is set to your liking, watching carefully it does not burn.
Oven Version: Place the cookie on the lined baking sheet. Bake for 13-15 minutes, or until the cookie is set to your liking, watching carefully it does not burn.
Helpful tips
- The great thing about most of these recipes is that they come together in just ONE bowl so it’s important to add the ingredients in the ORDER that they are listed in the recipes below.
- Use drippy nut or seed butter to start with and not hard (near the bottom of the jar) butter – you can also heat it up in the microwave or saucepan if needed.
- Do NOT go overboard with your mix-ins, otherwise, the cookies will crumble and fall apart
- If the cookie dough mixture seems too dry, add more liquid binder, a little bit at a time until the dough sticks together.
- Alternatively, if the cookie dough mixture seems too wet, experiment by adding some more oats, shredded coconut or ground flaxseeds, finely ground oats or almond flour to help the dough stay together.
