Looking for an easy and healthy snack besides all the holiday cookies? These Frozen Banana Bites are made with just 4 simple ingredients and always a hit with everyone. All you need are some ripe bananas, your favorite nut butter and melted chocolate. You can enjoy them for a pre or post workout snack or a late night treat. Completely family friendly and so easy that even your kids can join in the fun and help to make them.

Ingredients you need
- Bananas – be sure to use ripe bananas and slice them into coins
- Creamy nut butter – use your favorite. Peanut butter, almond butter, cashew butter or sunflower seed butter to keep these nut-free
- Dairy-free chopped chocolate or dairy-free chocolate chips – we like to Hu’s Kitchen or Lily’s Sweets. You may also use regular chocolate chips if you prefer.
- Coconut oil – use refined coconut oil if you don’t like the hint of coconut or are allergic
Optional Toppings:
- Shredded coconut
- Chopped nuts
- Crushed freeze-dried berries
How to make Banana Bites
- PREPARE BAKING SHEET: Line a baking sheet with wax or parchment paper.
- CUT BANANAS: Peel bananas and slice into 1/4 inch thick coins.
- FILL BANANA SLICES WITH NUT BUTTER: Use a small knife, to spread 1/2-2/3 tsp. of various fillings on half of the banana slices.
- SANDWICH: Place the other banana slices on top of each to make a sandwich.
- FREEZE BANANAS: Place the assembled banana sandwiches on the lined baking sheet and freeze for at least 2 hours or until solid.
- MAKE THE CHOCOLATE COATING: Once bananas are frozen, prepare the chocolate coating. Melt chocolate chips and coconut oil in a medium bowl and microwave on medium-high in 30 second increments, stirring well in between or over a double boiler over the stove.
- DIP BANANA INTO CHOCOLATE: Remove baking sheet from freezer, and working quickly, hold each banana sandwich and dip half of it in the bowl of melted chocolate.
- SPRINKLE WITH TOPPINGS: Place back on baking sheet and sprinkle with various toppings.
- FREEZE again for 2 hours or until frozen solid again and enjoy.Store in freezer in an airtight container.
Variations
Chocolate – you can use dark chocolate, milk chocolate, semi-sweet chocolate or even white chocolate for a decadent treat.
Filling – instead of nut butter, you can also use:
- Strawberry Jam
- Sunflower Seed Butter
- Tahini
- Creamy Coconut Manna (Butter)
- Dairy-Free Cream Cheese
- Toppings – feel free to have fun with your toppings. Coconut flakes, mini chocolate chips, sesame seeds, hemp seeds, chopped nuts or crushed cereal.
Storage tips
These banana bites can be stored in a single layer in an airtight freezer-safe container for up to 2 months. You can enjoy them straight from the freezer or let them thaw out slightly.
