- Rice Cakes: We like these organic brown rice cakes but you can use any rice cakes, thin rice stackers, corn thins or even your favorite grain-free crackers if you’re not a fan of rice cakes.
- Cashew butter: Or peanut butter mimic the Snickers taste the most but you can sub with almond butter or any nut butter or seed butter of your choice.
- Maple syrup: You can sub with date syrup, yacon syrup, coconut nectar syrup, sugar-free maple syrup, vegan honey or your preferred sticky liquid sweetener.
- Vanilla extract: For flavor.
- Plant-based protein powder: Or plant-based collagen powder. We like NuZest Just Clean or Sprout Living Pea Protein but you can use your favorite. Optional for added protein.
- Cashews: Roughly chopped. Sub with peanuts if preferred.
- Flakey Sea Salt: For garnish.

How to Make the TikTok Rice Cake Recipe
We like to keep our pantry stocked with rice cakes for a quick and easy snack. This recipe is the perfect post-workout or late-night treat!
Chocolate Rice Cakes:
- Mix the Peanut Butter Topping: In a medium bowl, mix together the nut butter, sweetener, vanilla and optional collagen / protein powder until smooth and combined.
- Spread on Rice Cake: Spread in an even layer on each rice cake. Top each rice cake evenly with some roughly chopped cashews / peanuts.
- Melt the Chocolate: Melt the chocolate chips in a heat-safe bowl in a double-boiler or microwave in 20-30 second increments until melted and smooth.
- Top over Rice Cake: Spread evenly over each rice cake. Then sprinkle each with a tiny pinch of flakey sea salt and finely chopped nuts.
