I’ve been on such an ice cream kick lately.  June is National Dairy Month so I think I can totally justify that we’ve been enjoying our fair share of ice cream cones, cakes and bars.

Out of all the frozen treats I remember from my childhood,  one of my favorite ones were these Good Humor Strawberry Shortcake Ice Cream Bars.

I could never resist that bright strawberry center surrounded by the creamy vanilla ice cream and strawberry crumb coating and have always wanted to try recreating them.

I made something similar last year —these no-bake Strawberry Shortcake Golden Oreo Truffles still remain a reader favorite but I knew I wanted to try a frozen version next.

Last month, I finally had a chance to play around and recreate my own homemade version of these nostalgic treats along with these Lemon Cream Pie Ice Cream Bars and S’mores Ice Cream Bars.

These ice cream bars are so simple to make and you can easily find all the ingredients you need.

Easy 5 ingredient strawberry shortcake ice cream bars with the best Golden Oreo top & no-bake cookie crust. A fun twist of Good Humor Ice Cream Popsicles

  • They start off with a no-bake Golden Oreo cookie crust that we just press into a square pan.
  • Next we spread a layer of your favorite vanilla ice cream (homemade or from the store).
  • A layer of strawberry sorbet (homemade or from the store) gets spread over.  If you can’t find strawberry sorbet, you can also use strawberry ice cream and blend it together with a cup of frozen strawberries.
  • Top with another layer of vanilla ice cream.
  • Sprinkle on the strawberry crumbled topping which is just crushed Golden Oreos mixed together with softened butter and powdered freeze-dried strawberries.

— If you can’t find freeze-dried strawberries, you can also substitute with strawberry flavored gelatin powder.  The strawberry crumb topping is soooo good even on its own that you just might want to sprinkle it on everything in sight 🙂

  • Finally, pop the pan into the freezer so they set up and then cut them into little squares.

Strawberry Shortcake Ice Cream Bars

Simple & delicious ice cream bars with layers of vanilla & strawberry ice cream with a crumbled Golden Oreo topping & no-bake cookie crust. A fun twist on the classic Good Humor Ice Cream Popsicles.

Oreo Cookie Crust

22 Golden Oreo cookies, (or any Vanilla Creme Sandwich Cookies) crushed with the cream filling (about 2 cups)

4-5 tablespoons butter, melted

4 1/2 - 5 cups of your favorite Vanilla Ice Cream ( homemade or store-bought)

2 1/2 cups of Strawberry Sorbet (homemade or store-bought)***

Crumbled Topping

12 Golden Oreo cookies, crushed

1 1/2 tablespoons butter, softened

3 tablespoons freeze-dried strawberry (pulsed into powder*) OR strawberry gelatin (jello) powder


  1. Line an 8 x 8 square baking dish with parchment or wax paper leaving an overhang for easier removal of the bars. Set aside.
  2. Make the cookie crust - In a medium-sized bowl or a food processor, add the entire Oreo cookies (no need to remove the cream filling) and pulse into fine crumbs. Add the melted butter and blend until well combined. Press mixture into the bottom of lined baking dish. Place in freezer for about 1 hour to set.
  3. Make the crumbled topping - In a small bowl or the food processor, add the Oreo cookies and pulse into large crumbs. Add the softened butter and mix gently with a fork or your hands to make pea-sized pieces stick together. Scoop out 2 tablespoons of the mixture into a small bowl and set aside. Pour freeze-dried strawberry powder (or strawberry jello powder) over the remaining crumbs and continue pinching the pieces together. Add more softened butter if needed for mixture to stick to the cookies. Set aside and place in the freezer to set.
  4. Assemble - Remove vanilla ice cream and strawberry sorbet from freezer to soften. When ready, scoop around 2 cups of vanilla ice cream over the cookie crust and spread evenly using an offset spatula.
  5. Place pan in freezer to harden slightly (about 10 - 20 minutes).
  6. Next, spread the sorbet over the vanilla ice cream layer evenly. Again, place pan in freezer for 10 minutes if needed. Add the final layer of vanilla ice cream spreading evenly.
  7. Sprinkle the reserved Oreo cookie crumbs over the top. Next remove the strawberry cookie crumbs from the freezer and crumble evenly over the bars. Place in the freezer for 3-4 hours or overnight.
  8. Lift out of pan using the parchment paper overhang . Using a sharp knife, cut into square rectangles. Store bars in freezer until ready to serve.


To make the strawberry powder, pulverize the freeze dried strawberries using a food processor, mortar and pestle, or plastic bag and rolling pin. We want the powder to be fine. Around 1 ounce of freeze dried strawberries will yield 3 tablespoons of powder.

*If you can't find strawberry sorbet, you can use strawberry ice cream and blend with 1 - 1 1/2 cups of frozen strawberries.

***To ensure even layers of the ice cream, place the pan back in the freezer for about 10 minutes after adding each layer.

  66. Thank you for sharing your creation, I made this and it was a hit at my party! Everyone wanted recipe and kept asking me about it. Definitely a keeper! It taste deliciously refreshing just like the original strawberry Shortcake good humor bar maybe even better…and its so pretty and easy to make. The only problem I ran into was strawberry sorbet my local grocery store was out so I swapped for raspberry which tasted just as awesome.

  79. Ran across this recipe for the Strawberry Shortcake Bars while looking on Facebook. They look exactly like the popcicles I remember as a child when my Dad would take my 2 sisters and I to an old auction house on Saturday nights. There is one difference though, they are much, much better. I enjoyed making them and they are delicious as well. Thanks so much for sharing your recipes for us to enjoy.

  80. I made the crumb coat recipe. It was amazing. the cake is strawberry with whipped cream frosting. I cannot wait until I make the ice cream bars. great recipe
