Today is a special birthday celebration for Life made Sweeter – this little blog is ONE year old today!

I still can’t believe that a year ago I shared this fortune cookie recipe with whoever was reading – a.k.a. my mom, dad and husband ;)

I have learned so much about the food blogging world this past year and I am excited to continue to learn so much more.

I originally started this blog as a way of encouraging me to enjoy my time in the kitchen more since I was starting to find myself in a cooking rut.

I began looking for different recipes online and eventually started reading food blogs which inspired me to start my own.

Little did I realize at the time what a big learning curve there is and how much time  running a food blog actually takes up.

No matter what happens down the road, I am so thankful that this blog has helped me to evolve my cooking as well as branch out of my comfort zone with making different types of food for my family.

It brought back so much joy to be in the kitchen again and hopefully I have been able to inspire some of you to get into the kitchen and get excited about all things food as well.

My favorite part has definitely been being able to connect with so many fellow bloggers and readers.

Your kindness and friendship means a lot to me and I think you guys are seriously the best!

When I had to take a two month hiatus and step away from blogging because of this little reason, I truly considered not coming back if it weren’t for my loyal readers and friends.

To show you all how much I appreciate your love and support, I made you a Strawberry Shortcake for this celebration :)

The cake is a light and airy vanilla cake base with a strawberry filling and then frosted with a stabilized whipped cream frosting.

You can choose to frost the whole cake or just the top and add some sliced strawberries. I chose to decorate mine with Red Velvet Valentine Macarons , some heart sprinkles as well as a pink fondant flower.

This light and tasty cake is perfect for any birthday celebration as well as Valentine’s Day.

Strawberry Shortcake

Yield: One Six-Inch Two Layered Cake

Strawberry Shortcake

A two layer light and tasty Strawberry Shortcake with a strawberry filling and topped with a stabilized whipped cream frosting. Perfect for any birthday celebration as well as Valentine's Day.

Ingredients

  • * 1 1/4 cups cake flour
  • * 1/2 tablespoon baking powder
  • * 1/4 teaspoon salt
  • * 1 teaspoon pure vanilla extract
  • * 1/2 cup buttermilk, room temperature
  • * 2 large egg whites, room temperature
  • * 3/4 cups granulated sugar
  • * 1/2 stick unsalted butter, room temperature
  • Stabilized Whipped Cream Frosting
  • * 1 teaspoons unflavored gelatin
  • * 4 teaspoons cold water
  • * 1 cups heavy whipping cream
  • * 1/4 cup sifted icing sugar
  • Strawberry Filling
  • * 2 cups diced strawberries, fresh or frozen (I used frozen)
  • * 1/2 cup granulated sugar
  • * 1 Tablespoon cornstarch

Instructions

    Cake
  1. Preheat oven to 350 F. Grease and line the bottom of two round 6-inch cake pans with parchment paper.
  2. In a medium bowl, sift together the flour, baking powder and salt.
  3. Whisk together the buttermilk and egg whites in a small bowl.
  4. In a stand mixer with the paddle attachment or with a hand mixer, cream the butte at medium speed for about 3 minutes. Add sugar and continue beating for another 3 minutes until the color is very light.
  5. Beat in the vanilla extract until combined.
  6. Slowly add one third of the flour mixture, still beating on medium speed.
  7. Beat in half of the milk/egg mixture, then beat in half of the remaining dry ingredients until incorporated. Add the rest of the milk and eggs beating until the batter is homogeneous, then add the last of the dry ingredients.
  8. Divide the batter between the two pans and smooth the tops with a rubber spatula. Bake for 25-30 minutes, or until a toothpick comes out clean.
  9. Let cool on racks for 10 minutes before loosening the sides with a small metal spatula, and invert onto greased wire racks.
  10. Gently turn cakes back up, so the tops are up and cool completely before filling and frosting.
  11. Stabilized Whipped Cream Frosting
  12. Combine gelatin and cold water and let it stand until thick.
  13. Microwave on high for about 5 second intervals until the gelatin has dissolved.
  14. Remove from heat; cool (do not allow it to set).
  15. Using your stand mixer or hand mixer, whip the cream with the icing sugar, until slightly thick.
  16. While slowly beating, add the dissolved gelatin mix to whipping cream.
  17. Whip at high speed until stiff.
  18. Strawberry Filling
  19. In a small saucepan over medium heat, combine strawberries and sugar stirring until the strawberry juices have been released.
  20. Add the cornstarch and continue to stir for another 2 minutes until the mixture becomes thicker.
  21. Assembly
  22. Using an offset spatula, spread strawberry filling on top of one layer.
  23. Layer top cake layer over the strawberry filling.
  24. Ice the whole cake with the rest of the frosting if desired or only the top part of the cake.
  25. Feel free to add fresh strawberries or fondant flowers as garnishes on top.

    My favorite celebration cake is a traditional Hungarian cake, Dobos’ Torte. It usually averages around 20 layers, and the layers are as thin as crepes. It takes a long time to make, so it is usually served only for special occasions.
