Why You Should Make This Recipe
This sweet potato tots recipe is Whole30 friendly and suitable for any vegan or vegetarian diets. It’s super easy to prepare and made with just a couple simple pantry ingredients that you probably already have around the house! These crispy sweet potato tots are delicious with any homemade sauce or ketchup.
Ingredients For These Homemade Sweet Potato Tots
Classic sweet potato tot recipes use all purpose flour, panko crumbs and other fillers. To make our healthy sweet potato tots, you’re going to need:
- Sweet potato – one whole sweet potato peeled
- Zucchini – 2 medium sized zucchinis and freshly grated
- Sea salt – for optimal flavors
- Black pepper – pepper for extra flavors
- Cajun spice mix or seasoning salt – make sure they are paleo / Whole30 compliant
- Almond meal or flour – a gluten free alternative that creates tender tots
How to Make Sweet Potato Tots
- BOIL THE SWEET POTATO: Bring a medium pot of water to a boil. Add the whole sweet potato and cook for about 20-25 minutes, until you can pierce it easily with a fork.
- DRAIN: Drain and use the fork to mash the sweet potato while still warm.
- ADD ZUCCHINI: Grate the zucchini directly into the same pot as the mashed sweet potato. Add salt, black pepper, garlic powder, and Cajun seasoning, until combined.
- MIX TOGETHER: Add 1/4 cup almond flour, using your hands to press until you can easily form a firm cylinder tot shape without it falling apart. Add more almond flour as needed, 1 teaspoon at a time.
- BAKE: Set them on a lined baking sheet in rows so that they are not touching each other.
For The Oven
- PREHEAT: Preheat the oven to 400 F.
- PARCHMENT PAPER: Line a large baking sheet with parchment paper. Set aside.
- BAKING THE TOTS: Bake for 15 minutes. Then, flip them over. Return to the oven and bake for another 10 – 15 minutes.
- BROIL: Turn oven to broil for about 1-2 minutes, watching carefully until the tots are lightly browned.
- ENJOY: Serve with your favorite dipping sauce and enjoy immediately.
For The Air Fryer
- HEAT AIR FRYER: Heat your air fryer to 400 F.
- ARRANGE TOTS: Carefully arrange tots on the air fryer basket so there is space between them. You will need to cook in 2-3 batches.
- COOKING TIME: Cook for 7-8 minutes or until firm enough to flip over. Cook for an additional 5-7 more minutes, until both sides are crispy.
- SERVE: Be careful to watch and check on the time to be sure they do not burn. Serve with your favorite dipping sauce and enjoy immediately.
How To Store
Transfer any cooked sweet potato tots into a reusable storage container. Store the leftovers in the refrigerator for up to four days. If you would like to freeze this recipe, then store the zucchini tots in an airtight container or bag for up to four months. When ready to enjoy, allow the tots to thaw overnight in the refrigerator and pop them in the microwave or oven.
