Happy Friday friends!

I brought truffles to celebrate that the weekend is almost here again!

Strawberry Shortcake Oreo Truffles make the perfect no bake treat!

Not just any truffles though…

Strawberry Shortcake Golden Oreo Truffles!

Because it’s felt like a long and tiring week and truffles were just what I needed to keep me going.

Strawberry Shortcake Oreo Truffles3.jpg

Oreo truffles are so easy to whip up and you ONLY need 3 ingredients.

Oreo cookies, cream cheese and melted chocolate.

Of course adding sprinkles or sanding sugar makes them prettier.  So make that 4 ingredients.

Strawberry Shortcake Oreo Truffles4.jpg

But since I had some strawberries that were getting lonely,  I chopped some up and stuffed them into the truffle balls along with some fresh whipped cream.

Because stuffed desserts are just so much more fun.

Coated with white chocolate and Oreo cookie crumbs, these guys are like strawberry shortcake in truffle form.

So, if you’ve had a long week and are craving strawberry shortcake but don’t feel like turning on your oven, these simple no-bake treats are just what you need.

Strawberry Shortcake Stuffed Golden Oreo Truffles

Strawberry shortcake truffles made with Golden Oreo cookies and cream cheese. The dough balls are stuffed with fresh strawberries and whipped cream then dipped into melted white chocolate. A simple and fun way to enjoy the classic strawberry shortcake.

Save Recipe

* 4 ounces cream cheese, softened

* 20 Golden Oreos

* 8 ounces white chocolate, coarsely chopped or white candy melts

* 1/2 cup whipped cream (whipped to stiff peaks kept very cold)

* 3 fresh strawberries, finely chopped

* sprinkles

* 1 crushed Golden Oreo cookie (minus the filling)

  1. Crush entire Oreo cookies (with filling) in a food processor. Add cream cheese and mix until a dough forms.
  2. Refrigerate for 20 minutes if dough is too soft.
  3. Line two baking sheets or flat plates/tray with parchment paper. Set aside.
  4. Using a measuring spoon, scoop out 1/2 tablespoon of oreo mixture. Roll into a ball and flatten. Add about 1/8 teaspoon of very cold whipped cream and another 1/8 - 1/4 teaspoon of finely chopped strawberries. Scoop another 1/2 tablespoon of oreo mixture on top and roll into balls.
  5. Place Oreo ball on the prepared plate and immediately freeze each truffle as you form them. Repeat with the rest of the Oreo balls and add to the plate in the freezer.
  6. On a double boiler, melt chocolate according to package directions.
  7. Remove 1 truffle from the freezer at a time - try to use the truffle you froze first. Pick up truffle with a fork and dip in melted chocolate, gently tapping your hand holding the fork to remove excess chocolate..
  8. Place on the other lined baking sheet - use a toothpick to help remove truffle from fork if needed. Top with sprinkles and crushed oreo cookies while the chocolate is still wet.
  9. Immediately refrigerate truffles as you work with them for at least 10 minutes so the chocolate sets. Repeat with the remaining truffles.
  10. Store in fridge until ready to serve up to 5 days.

  55. Hi Kelly How long can you let the truffles sit out after serving them?

    • Hi Donna, I usually take the truffles out of the fridge 5-10 minutes before I plan on serving them so the strawberry and whipped cream filling stay fresh. I think they should be okay to sit out at room temperature up to 45 minutes. If it’s a hot day though, I don’t recommend leaving them out for too long I would say 30 minutes at most to be safe. Please do let me know if they stay fresh if you do end up leaving them out longer since I’d love to know too:)
