Baked donuts made with fresh sweet strawberries and tangy lemon topped off with fresh strawberry frosting.  A burst of spring flavors that you can enjoy for breakfast or dessert.

Other than a low key family dinner with my parents – it was a delightful and relaxing weekend with no big plans, no visitors and no party preparations.

The weather was magnificent here so we snuck in a few walks and took both our little ones to the park together for the first time.

There was still snow here last week so I am hoping that the warmer spring temps are finally here to stay.

Even though the spring weather was a little bit slow to arrive this year, that didn’t stop me from making a ton of spring and summer inspired dishes earlier on that I haven’t had  a chance to share yet.

I baked these Strawberry and Lemon Donuts a few weeks ago for all the visitors we had when I finally saw fresh sweet strawberries at a decent price.

These donuts are a burst of spring in your mouth with fresh chopped strawberries and a touch of lemon zest and lemon juice added to the batter.

Lemon and strawberries are one of my favorite combinations since they go so well together and always remind me of bright and warm summer days.

I snuck in some white whole wheat flour in here like my other donut recipes and added buttermilk and melted coconut oil to ensure that they are light and fluffy.

Top these donuts off with a naturally pink frosting made with more fresh strawberries and you have a delectable treat that you can enjoy for breakfast, an afternoon snack or dessert.

And of course, toss on some pretty sprinkles to brighten up any drabby Monday:)

Baked Strawberry and Lemon Frosted Cake Donuts

Prep Time: 10 minutes

Cook Time: 13 minutes

Yield: 8 donuts

Baked donuts made with fresh sweet strawberries and tangy lemon topped off with fresh strawberry frosting. A burst of spring flavors that you can enjoy for breakfast or dessert.


  • * 1/2 cup white whole wheat flour
  • * 2/3 cup all purpose flour
  • * 1/4 cup of granulated sugar
  • * 1/4 cup of light brown sugar, packed
  • * 1/2 teaspoon of baking powder
  • * 1/2 teaspoon of baking soda
  • * 1/3 cup non-fat buttermilk, room temperature
  • * 1 egg, room temperature
  • * 1 tablespoon coconut oil, melted and cooled
  • * 1 tablespoon of butter, melted and cooled
  • * 1/2 teaspoon pure vanilla extract
  • * 1/3 cup strawberries, finely chopped
  • * juice and zest from 1 large lemon
  • Strawberry Frosting
  • * 1 and 1/2 cups of powdered sugar, sifted
  • * 4 strawberries, finely chopped
  • * 1/2 - 1 tablespoon of milk


  1. Preheat oven to 375 degrees F.
  2. Lightly spray donut pan with baking spray.
  3. In a large bowl, whisk together the flours, sugars, baking powder, baking soda and salt.
  4. In a liquid measuring cup, pour in the buttermilk and whisk in egg, vanilla extract, lemon juice, lemon zest and melted coconut oil.
  5. Add the liquids to the flour mixture stirring with a rubber spatula until just combined.
  6. Gently fold in the finely chopped strawberries.
  7. Using a small spoon fill each donut pan about 3/4 of the way full.
  8. Bake for 8-10 minutes in preheated oven until toothpick inserted into center of doughnut comes out clean - about 10-12 minutes.
  9. Allow donuts to cool in the pan for about 5 minutes before inverting onto a wire cooling rack to cool completely.
  10. While the donuts are cooling, prepare the strawberry frosting.
  11. Frosting
  12. In a medium bowl, mash strawberries using a fork. Add greek yogurt, softened butter and 3/4 cup of the powdered sugar and continue mixing with the fork until the frosting is incorporated. Add a little bit more of powdered sugar and milk at a time until desired consistency is reached.
  13. Spread frosting onto cooled donuts.
  14. Top with sprinkles if desired.


These donuts are best enjoyed the same day they are made.

  38. Glad to know that you had a delightful and low-key weekend, we also had a loy key family dinner with my partner’s family. It was lovely. We had a massive pasta dish, kale salad and some strong Italian wines. Donuts are something I would love to make someday, I just need a donut pan to make them! Baked donuts sound pretty tasty with the strawberry-lemon frosting! A perfect dessert or even breakfast for the spring! Now I’m really craving to make my own donuts with that strawberry frosting…I haven’t seen strawberries yet at the farmers market, I hope I will see some! :(

    • We love strawberries here too – my lil guy can eat a whole pint by himself in one sitting if you let him hehe.
