Vegan Carrot Cake for Spring
With spring not too far away, carrot cake is a must for this time of year. My family is crazy about all things carrot cake like these carrot cake pancakes, carrot cake cookies and carrot cake energy bites. And as much as we love carrot cake from scratch, most of the time we just want a quick and easy dessert when we’re craving something sweet.
This carrot mug cake has all the amazing flavors we love in a classic carrot cake but takes less than 10 minutes to make.
Not only is this microwave carrot cake recipe easy to make, the cake is tender, moist, full of flavor and utterly delicious.
IS CARROT MUG CAKE KETO?
Typical mug cakes are made with all purpose flour and granulated sugar so they are not low carb or keto-friendly. Since this carrot cake in a mug is sugar free, low in carbs and grain free, you can certainly enjoy it in moderation if it fits your macros.
INGREDIENTS YOU NEED TO MAKE FOR THIS CAKE IN A MUG RECIPE
- Super-fine Blanched Almond Flour: I used almond flour for this vegan mug cake recipe and do not recommend swapping for coconut flour or any other flour.
- Baking Powder: leavening powder that helps the cake rise.
- Spices: cinnamon, nutmeg and ginger give the cake that classic carrot cake flavor
- Unsweetened applesauce: adds flavor & moisture without having to use an egg. You can also use pureed pumpkin OR half of a small ripe banana.
- Lakanto sugar-free maple syrup: a low-glycemic sugar-free sweetener that resembles the taste of maple syrup but is keto-friendly and diabetic-friendly. You can also sub pure maple syrup for a paleo mug cake or if you are not low carb.
- Almond Milk: we use Malk Organics. It’s an unsweetened almond milk with no gums or fillers to help keep this vegan mug cake dairy-free. Feel free to use any other plant-based milk of your choice
- Spices: cinnamon, nutmeg and ginger give the cake that classic carrot cake flavor
- Grated carrots: I like using finely grated carrots and usually use a hand grater. However, you can use a food processor or a or buy pre-grated carrots from the store.
OPTIONAL TOPPINGS:
- Unsweetened shredded coconut: adds texture, crunch and bring out the flavors of the cake.
- Grated carrots: I like using finely grated carrots and usually use a hand grater. However, you can use a food processor or a or buy pre-grated carrots from the store.
- Nuts: chopped pecans or walnuts add texture and crunch to the cake. However, I know that some people prefer carrot cake without nuts so feel free to leave them out if you want a nut-free carrot cake.
- Raisins: raisins are high in sugar so we left them out of our recipe but if you are NOT following a low carb diet, feel free to add them in if you like carrot cake with raisins.
HOW TO MAKE CARROT MUG CAKE
- In a large (14 oz) heat-safe mug or (12-14 oz) ramekin, use a small fork or whisk to combine the cashew butter, maple syrup, applesauce, grated carrots, almond milk and vanilla until smooth.
TO MAKE MUG CAKE IN THE MICROWAVE:
- Place mug on a small plate (in case of spillage) and microwave for about **65-75 seconds. Check on the cake to see that it’s done. (You may need to microwave for less or an additional 5-10 seconds depending on how powerful your microwave is.)
- Add toppings of your choice and serve with coconut whipped cream or melted coconut butter.
CAN YOU BAKE CARROT MUG CAKE WITH NO EGGS?
TO MAKE YOUR CARROT MUG CAKE IN THE OVEN:
- Preheat the oven to 350 degrees F. Mix all the ingredients together in a medium bowl or measuring cup.
- Transfer the batter to a large 12 oz ramekin. Bake for 13-15 minutes or until a toothpick comes out clean.
CAN I BAKE A MUG CAKE IN A MICROWAVEABLE BOWL?
Yes, you can mix all the ingredients for this flourless mug cake in a microwaveable bowl or ramekin.
SUGAR FREE TOPPING IDEAS:
You can top your carrot mug cake with:
- melted sugar free chocolate
- whip up some heavy cream to make whipped cream
- coconut whipped cream
- cream cheese frosting
- chopped nuts
- chocolate chips
HOW TO MAKE CREAM CHEESE FROSTING FOR CARROT CAKE:
Most classic carrot cakes call for an easy cream cheese frosting. Since this is a vegan carrot cake recipe, we used:
- coconut butter, melted
- Lakanto sugar-free maple syrup or pure maple syrup
- vanilla extract

- 2 tablespoons creamy cashew butter , gives the best flavor but can also sub with peanut butter, almond butter, tahini or sunbutter
- 2 tablespoons Lakanto maple syrup OR pure maple syrup
- 2 tablespoons unsweetened applesauce , (can sub with pureed pumpkin OR half of a small ripe mashed banana)
- 1 tablespoon unsweetened almond milk (I prefer using Malk Organics as it adds creaminess without any gums or fillers)
- 1.5 tablespoons grated carrots
- 1/2 teaspoon vanilla extract
- 3.5 tablespoons superfine almond flour
- 2/3 teaspoon gluten-free baking powder
- 2/3 tsp cinnamon
- 1/2 tsp ground ginger
- 1/8 teaspoon nutmeg
- grated coconut
- chopped pecans OR walnuts
- melted coconut butter (manna) , for topping
In a large (14 oz) heat-safe mug or (12-14 oz) ramekin, use a small fork or whisk to combine the cashew butter, maple syrup, applesauce, grated carrots, milk and vanilla until smooth.
Add the flour, baking powder, cinnamon, ginger, and nutmeg and stir until the batter is mixed together and has no clumps.
Place mug on a small plate (in case of spillage) and microwave for about **65-75 seconds. Check on the cake to see that it's done. (You may need to microwave for less or an additional 5-10 seconds depending on how powerful your microwave is.)
Add toppings of choice and drizzle with melted coconut butter or dairy-free cream cheese frosting if desired.
Preheat oven to 350 F.
Lightly coat a large 12 oz ramekin and transfer batter into the ramekin. Bake for 11-14 minutes or until cake is set.
**The cook time will vary according to your microwave - check after 65 seconds then pop it back in the microwave in 10 second increments if not done - do not overcook or mug cake will be dry
