Filled with a creamy coconut base and fresh blueberries, this vegan popsicle recipe is bursting with healthy flavors. With just a few simple steps and popsicle molds, you are able to create this easy recipe.
Why We Love This Recipe
We love this easy healthy popsicle recipe because it is made with fresh blueberries and can be sweetened with maple syrup for an extra boost of sweetness. When we are looking to cool down from the summer heat, then we fall back to these delicious vegan frozen treats.
These blueberry popsicles are super minimal! One of our favorite things about this recipe is the fact it is super easy to make. Just blend the blueberries, pour the ingredients into a popsicle mold, allow to freeze, and enjoy.
Ingredients For Vegan Blueberry Popsicles
- Blueberries: Use organic if available. Blueberries are used to create a tangy, yet sweet base
- Coconut milk: be sure to use full-fat canned coconut milk. We like the one from Trader Joe’s since it doesn’t contain any fillers but you can also substitute with Malk Organics, our favorite unsweetened almond milk.
Optional
- Liquid Sweetener: We used pure maple syrup to keep these paleo and vegan but feel free to use honey if not vegan or Lakanto Sugar-free maple syrup for keto. If you’re following a Whole30, simply leave out the sweetener.
- Grain-free Granola: The crumble topping is optional; Refer to this paleo granola recipe or use the crumble topping recipe from our Cherry Pie Bars.
How To Make Blueberry Popsicles
There are two different ways you can make these blueberry treats. You can make pretty layers like we did in our photos or just blend the coconut mixture together with the blueberries and pour directly into your popsicle molds.
TO MAKE BLUEBERRY LAYERED POPSICLES (AS PHOTOGRAPHED):
- MIX & POUR: If you are using a sweetener, whisk together 2.5 Tbsps liquid sweetener with coconut milk until smooth – use more or less depending on your preference. Fill popsicle molds halfway. Freeze for 30 minutes.
- BLEND THE BLUEBERRIES: In the meantime, add blueberries to a blender with 2 tsp liquid sweetener or water & blitz until smooth (or alternatively mash berries in a saucepan over medium heat).
- FILL WITH LAYERS: Remove popsicle mold from freezer, spoon blueberry mixture evenly between the popsicles. Layer with remaining coconut mixture. Freeze for 30 minutes.
- INSERTING THE POPSICLE STICKS: Top with optional granola and insert wooden popsicle stick.
- FREEZE: Freeze the popsicles with the sticks inserted for about four hours or until blueberry pops are set.
To Defrost
- TO THAW: Place the bottom of the popsicle mold under running tap water for about 20 seconds. The popsicle should carefully slide out now that has been defrosted.
TO MAKE REGULAR NON-LAYERED BLUEBERRY POPSICLES:
- MAKE THE POPSICLE MIXTURE: Add coconut milk, sweetener (if using) and blueberries to a blender. Blend until smooth then fill popsicle molds evenly between each popsicle.
- Freeze for 30 minutes.
- INSERTING THE POPSICLE STICKS: Top with optional granola and insert wooden popsicle stick.
- FREEZE: Freeze the popsicles with the sticks inserted for about four hours or until blueberry pops are set.
Tips And Variations
Feel free to substitute the coconut milk with any non-dairy milk you prefer.
An alternative to blending the blueberries would be to simmer them down and stir until they reach a smooth consistency.
If you do not have blueberries, then you could try raspberries, blackberries, or strawberries.
How To Store These Popsicles
These popsicles will freeze well in the freezer for up to three or four weeks. When ready to enjoy these blueberry popsicles, just run the popsicle mold under running tap water for about 20 seconds or until it starts to thaw.
Feel free to store these popsicles in a reusable freezer-safe bag.

- 1 14-ounce can of full-fat coconut milk
- 2 cups fresh or frozen blueberries
- 2-3 tablespoons liquid sweetener , we used maple syrup but you can use Lakanto sugar-free maple syrup or honey if not vegan
- homemade paleo granola , for topping
In a large bowl whisk together 2.5 Tbsps liquid sweetener with coconut milk until smooth - use more or less depending on your preference. Fill popsicle molds halfway. Freeze for 30 minutes.
Meanwhile, add blueberries to a blender with 2 tsp liquid sweetener or water & blitz until smooth (or alternatively mash berries in a saucepan over medium heat).
Remove popsicle mold from freezer, spoon blueberry mixture evenly between the popsicles. Layer with remaining coconut mixture. Freeze for 30 minutes.
Top with optional granola and insert wooden popsicle stick. Freeze for about 4 hours or until set.
To remove popsicles, run the clear part of the popsicle mold under hot water and firmly pull out the handle.
Add coconut milk, sweetener (if using) and blueberries to a blender. Blend until smooth then fill popsicle molds evenly between each popsicle. Freeze for 30 minutes.
Top with optional granola and insert wooden popsicle stick.
Freeze the popsicles with the sticks inserted for about four hours or until blueberry pops are set.
