Love rice but not the extra carbs? This Cauliflower Rice is easy to make and an easy side dish anyone can enjoy if they are wanting to stick to a low carb lifestyle. Not only is cauliflower rice incredibly healthy and delicious, but it makes a great addition to any meal that may traditionally call for brown or white rice. Unlike starchy rice, it is super low in carbohydrates, plus it’s paleo, Whole30, vegan and keto-friendly.
It is truly a breeze to create cauliflower rice with or without a food processor. For the first option, all you need is a box grater – no food processor required. This recipe is super versatile and minimal. The best part about this process is that even though we grate this cauliflower by hand, it still comes together within minutes!
What is riced cauliflower?
Cauliflower rice is just tiny pieces of cauliflower! Often found in the frozen section of grocery stores, this rice can be made at home.
This type of rice is used as an alternative to starchy grains. Cauliflower is tender and has just the right amount of chew to it, making it super digestible. People tend to reach for cauliflower rice due to the amazing nutrients and benefits that are in it all thanks to the vegetable itself.

How To Make Six Cups Of Cauliflower Rice Without A Food Processor
- Cut a head of fresh cauliflower into fourths. Make sure to fully remove the green stem from the center of the cauliflower.
- With a cheese grater and plate, gently rub cauliflower florets onto the grater. Medium-sized blades are best for cauliflower rice.
- Use the plate to catch the rice. Once all the cauliflower has been grated, then transfer to a storage container to freeze or use immediately.
How To Make Cauliflower Rice With a Food Processor
- Cut a head of fresh cauliflower into fourths using a sharp knife. Make sure to fully remove the green stem from the center of the cauliflower.
- Transfer cauliflower to a food processor fitted with the blade attachment. You may have to process in multiple batches depending on the size of your food processor and cauliflower. Do NOT fill more than 3/4 full.
- Pulse the cauliflower until completely broken down into couscous-sized granules.
Remove any large unprocessed pieces and grate them by hand or reprocess.
Notes For This Recipe
- Make sure to have a large plate or cutting board. Doing this without a food processor gets a bit messy!
- Be sure to grate entire florets of cauliflower.
- One head of cauliflower equates to about six cups of rice.
- Split the entire head of cauliflower into fourths prior to grating. This makes it way easier!

For meal prep, we like to portion out several servings of our grated riced cauliflower. A great way to portion rice servings out is by putting the servings in airtight containers, such as Ziploc bags or reusable glass containers. When it is time for us to cook our meals, we just dump the cauliflower into the skillet and cook!

One wonderful thing about this easy side dish is that it is just so versatile and easy to freeze! Just rice a huge batch of cauliflower, and then portion out the rice to store in a reusable bag or storage container.
With a marker, be sure to date each bag or container. Then, when ready to freeze the rice, squeeze all of the additional air out of each bag and pat the bag to create flat and even layers. Riced cauliflower is good in the freezer for up to six months.
