Easy S’mores Skillet Recipe
Craving s’mores but don’t have a campfire? This S’mores Skillet Cookie combines all the things you love about s’mores into a big skillet. It’s made with a soft and chewy cookie, melted chocolate, grain-free graham crackers and gooey marshmallows.
Plus, it’s grain-free, gluten-free, paleo and comes together in under 30 minutes! The s’mores cookie base bakes up with a soft center and nice and crispy edges. Serve it on its own or with a few scoops of ice cream and some melted chocolate. Either way, you’ve got one dreamy dessert perfect for sharing with your friends and family and no campfire required.
What are skillet cookies?
Skillet Cookies are just big cookies that you bake in a cast iron skillet. They come out warm and gooey and are so much easier to make!
Pizzokies are perfect if you are feeding a crowd and crunched for time since you won’t have to worry about making, chilling or rolling out cookie dough. Kids love helping to make them too since you can top them with whatever add-ins you like. Ingredients you need
Most cookie skillet recipes typically call for a mix of all purpose flour, butter, granulated sugar, brown sugar, butter, and milk chocolate chips.
To make this paleo chocolate chip cookie healthier, we are going to be using:
For the skillet cookie:
- Eggs – we’re going to need just 2 large eggs. To make this skillet cookie vegan, try subbing with 2 flax eggs for a Vegan Skillet Cookie
- Coconut sugar – an unrefined and lower glycemic sweetener but you can also try subbing with another low carb brown sugar substitute such as golden monk fruit sweetener to make this a Keto Skillet Cookie
- Cashew butter – this helps bind the cookie dough together. You can also sub with another nut butter or seed butter you like. Almond butter, peanut butter or sunflower seed butter will work.
- Maple syrup – you can also sub with any sticky liquid sweetener. Pure coconut nectar syrup, Lakanto SF maple syrup or honey.
- Baking soda – helps the skillet cookie rise.
- Vanilla extract, ground cinnamon and a pinch of salt: these balance out the sweetness and add flavor to help make these soft and chewy blondies taste even more amazing and delicious
- Almond flour – an amazing gluten free alternative to all purpose flour. Be sure to use superfine almond flour and not almond meal.
S’mores filling
- Gluten-free graham crackers – we like Simple Mills Grain-Free Honey Cinnamon Sweet Thins, Simple Mills Crunchy Cinnamon Cookies or Hu’s Kitchen Grain-Free Snickerdoodles to keep this recipe grain-free, vegan and paleo-friendly. You can also use regular or gluten-free graham crackers if not paleo.
- Chocolate spread – melted slightly. We like this Chocolate Hazelnut spread from Artisana (a healthier Nutella) which is paleo or these from Healthy Crunch which are dairy-free + refined sugar free.
- Vegan marshmallows – We like MyDandies Vegan Marshmallows or Sweet Apricity for strict paleo. I also have a homemade marshmallow recipe.
- Chocolate chips – or chopped dark chocolate. We like Hu’s Kitchen Gems, Lily’s Sweets or Pascha’s Chocolate
How to make this S’mores Skillet Cookie
- PREHEAT OVEN AND PREP PAN: Preheat your oven to 350F. Lightly coat 8-inch skillet or pan with coconut oil or avocado oil spray.
- Mix the wet ingredients: In a large bowl, whisk together the eggs, coconut sugar, nut butter, maple syrup and vanilla.
- Add the dry ingredients: Place a large mesh sieve over the bowl and sift in the almond flour, baking soda, cinnamon and salt and mix until the dough is combined.
- Fold in add-ins: Fold in half of the chocolate gems along with half of the marshmallows.
- Transfer to pan: Spread half of the batter into prepared skillet and smooth top with an off-set spatula.
- Spread chocolate spread evenly over the cookie dough. Drop remaining cookie dough over top and smooth evenly with the off-set spatula. Press in remaining chocolate squares and marshmallows. Sprinkle with graham cracker crumbs if desired.
- Bake: Bake for 23-28 minutes, or until edges turn slightly golden brown.
- Cool: Remove from oven and allow to cool before cutting into slices.
- Add toppings and enjoy: Drizzle with melted chocolate and serve with ice cream if desired
Variations:
Make a large skillet for parties or barbecues: Double the cookie dough recipe and use a 9-inch cast iron skillet or oven-safe baking pan. Increase the baking time .
Chocolate chips: If your guests don’t have any dietary concerns, feel free to substitute the dairy-free chocolate chips with semi-sweet chocolate chips, mini chocolate chips, white chocolate chips or butterscotch chocolate chips.
Add-ins: Have fun with your toppings and add chopped walnuts or pecans.

How to store a Skillet Cookie
The great thing about making this easy dessert is that you can make the cookie dough ahead and store in the refrigerator for 1-2 days or frozen for 2-3 months.
How to freeze this pizookie recipe
The great thing about most cookie dough recipes is that you can make them ahead of time and freeze them to make them later.
If you prefer to freeze one that is already made, simply bake your cookie skillet and allow it to cool completely. Once it’s cool, slice into wedges and store them in an air-tight container for up to 3 months.
Reheating instructions
To reheat your cookie skillet, you can either place a wedge on a microwave safe plate and warm in the oven for 10-20 seconds or bake it in any oven safe baking dish at 335F 10-15 minutes, or until warm.

- 1/2 cup creamy cashew butter , melted slightly if needed - use microwave or double broiler on stovetop. Or sub with any nut or seed butter
- 2 tablespoons maple syrup OR sub with any sticky liquid sweetener. Pure coconut nectar syrup, Lakanto SF maple syrup or honey.
- 1 tsp vanilla extract
- 1 cup superfine blanched almond flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/8 tsp fine sea salt
- 1/3 cup dairy-free chocolate chips or Hu's Kitchen Gems , divided. We like Lily's Sweets or Pascha's Chocolate.
- 1/2 cup mini marshmallows divided. We like MyDandies Vegan Marshmallows or Sweet Apricity for strict paleo. I also have a homemade marshmallow recipe
