As much as I am not ready for summer to end just yet, I have already started to see lots of back to-school gear popping up all over the stores. Our kids don’t start until after labor day but I’ve already started gathering up some Iunchbox snacks ready to go.
Enter energy bites or energy balls. They are one of our favorite healthy snacks to make. A few recipe variations we rotate between include:

These Oatmeal Raisin Energy Bites are the perfect healthier treat when you’re craving an oatmeal raisin cookie. They are gluten free, refined sugar free and require less than 5 minutes of prep time. The best part is how easy they are to customize with whatever ingredients you like or have in your pantry.
WHAT INGREDIENTS DO I NEED TO MAKE OATMEAL RAISIN ENERGY BITES?
- old fashioned oats (use gluten free if necessary – my favorite is Bob’s Red Mill)
- almond butter – or use any other nut or seed butter you like
- melted coconut oil
- honey (use brown rice syrup, maples syrup or other liquid sweetener of your choice)
- pure vanilla extract
- ground cinnamon
- flaxseeds
- salt
- raisins
Be sure to check your labels if you have any food allergies or sensitivities and use gluten free or nut free ingredients as needed.
HOW TO MAKE OATMEAL RAISIN ENERGY BITES:
- You’re going to mix together the heated nut butter and honey until smooth. Stir in the oats, flaxseeds, cinnamon, salt, vanilla and raisins until well combined.
Wet hands slightly and form dough tightly into 1″ – 1.5″ balls. If dough doesn’t stick together add 1/2 tablespoon water (or melted coconut oil) at a time until dough comes together or place dough in the fridge for 30 minutes prior to forming dough balls so it’s easier to handle.
- Store in airtight container in refrigerator or freezer until ready to enjoy.

- 2/3 cup natural creamy almond butter slightly heated
- 1/3 cup liquid honey
- 1 2/3 cups old-fashioned rolled oats gluten free as needed - I use Bob's Red Mill
- 1/4 cup ground flaxseeds
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/3 cup raisins

DELICIOUS! Only edit i made was to use my homemade cashew butter instead of almond Butter. PErfect treat for my low fAT diEt.

Made this today….only thing i did differently was add ground flaxseed and protein powder to boost the protein value. will be making again!
