Ice cream sandwiches with toasted coconut banana bread and filled with creamy coconut ice cream sandwiched in between.  Enjoy this classic frozen treat with a fun twist that is gluten free and dairy free.

With only a few weeks of summer left, we are trying to soak it up with all the fun things we remember as a kid.  For me, there was nothing better than an ice cream sandwich to cool down with on a warm summer day.  I can still remember how excited I got every time I sank my teeth into one of those cool frozen treats.

These Toasted Coconut Banana Bread Ice Cream Sandwiches are an upgraded version with a tropical twist on this classic treat.

The gluten-free banana bread was amazing all on its own but I couldn’t resist stuffing it with some coconut ice cream for the filling.  The flavor combination of banana and coconut were a match made in heaven.

The gluten free banana bread batter was baked in this Wilton Ice Cream Sandwich Pan but if you don’t have one, you could definitely use either a jumbo muffin tin or a regular muffin tin filled 1/3 of the way for smaller ice cream sandwiches.  The cakes will be just the right thickness to sandwich a scoop or so of creamy coconut dairy-free ice cream between them.

Or instead of using the ice cream recipe below, go for your favorite ice cream – it will be amazing either way!  Just don’t forget to roll the sides into a pile of toasted coconut, sprinkles or even chocolate chips.  Then be prepared to bring out the kid in you!

These homemade and healthier ice cream sandwiches make a great non-dairy and gluten free frozen treat to beat the summer heat!  My lil guy simply couldn’t wait to sink his chompers into them :)

 

Toasted Coconut Banana Bread Ice Cream Sandwiches {GF}{DF}

Yield: 6 ice cream sandwiches

Ingredients

    Banana Bread
  • * 1 cup mashed very ripe bananas (I used 2 medium bananas)
  • * 1/4 cup raw organic honey
  • * 1/3 cup unsweetened applesauce
  • * 1 egg
  • * 1/2 teaspoon pure vanilla extract
  • * 3/4 cup gluten-free oat flour* (I make mine by grinding certified gf oats)
  • * 1/4 cup toasted unsweetened shredded coconut
  • * 1/4 teaspoon salt
  • * 1/4 teaspoon baking soda
  • * 1/4 teaspoon baking powder
  • * 1/2 teaspoon cinnamon
  • Coconut Ice Cream
  • * 2 cans full fat coconut milk (the higher the fat the more creamy the ice cream)
  • * 1/2 cup raw organic honey or sugar
  • * 1 tablespoon pure vanilla extract
  • Optional Toppings
  • * 1/2 cup toasted unsweetened shredded coconut
  • * sprinkles
  • * mini chocolate chips

Instructions

  1. Preheat oven to 350 F. Spray Wilton Ice Cream Sandwich pan or muffin tin with non-stick spray.
  2. In a large bowl, mash bananas with a fork. Mix in egg, honey and vanilla.
  3. In a separate bowl, whisk together the oat flour, cinnamon, baking soda, baking powder and salt.
  4. Add to the wet ingredients and fold together until just combined. Fold in toasted coconut.
  5. Spoon batter into the prepared pan - fill cavity 2/3 way full (or if using a muffin tin 1/3 - 1/2 way full) and bake about 10-12 minutes or until toothpick comes out clean.
  6. Allow to cool completely before assembling.
  7. Coconut Ice Cream
  8. In a medium sized pot over medium low heat, combine all the ingredients until honey or sugar has completely dissolved and the mixture is smooth.
  9. Cover and refrigerate until cooled completely then process in your ice cream maker according to the manufacturer's instructions.
  10. Place in a covered freezer safe container.
  11. Freeze until firm.
  12. When ready to assemble, remove from freezer and allow a few minutes (5-15 minutes - varies depending on coconut milk used) for ice cream to soften at room temperature before scooping.
  13. Assembly
  14. Fill banana cakes with generous scoops of coconut ice cream. Roll into toasted coconut, sprinkles or even mini chocolate chips.
  15. Wrap each sandwich in plastic wrap and store in freezer allowing to set up and harden slightly or until ready to enjoy.

    Oh boy dairy free creamy ice cream sandwiches sound so good Kelly! I am so happy you made a dairy free version for those of us who can’t have dairy :) They look so big an chewy I am going to half to get me a pan so I can come up with nice cookies with out the fuss!     Kelly, these look and sound INcredible!! I’m all for any ice cream sandwich but what an unusual combination this is. That coconut ice cream sounds sooo good!       Hi again Kelly – I tried the coconut milk ice cream…I had a can of full-fat coconut milk in the house and had to restrain myself from trying it immediately! It tasted sooo good…nothing but deliciously addicting coconut milk flavor! Mine froze very hard (maybe making a half-batch doesn’t help) but it was super delicious. Thank you for sharing the easy recipe – it was so much fun to try! I posted about it just now… Thanks again! : )

        Yay, so glad you tried it Monica :) I read that coconut ice cream tends to freeze really hard too depending on the batch of coconut milk used. The first time I made this I had to let mine sit out for about 10-15 minutes before scooping. The next few times the ice cream was softer and I only had to wait about a minute or two. To be safe, I’d say let it sit out until it softens to the consistency you like or enjoy straight out of the ice cream maker :) Thanks for letting me know and so glad you enjoyed it :)

          Thanks, Kelly. I don’t mind planning in advance and making sure I let the ice cream sit out. It’s so tasty! : ) That’s really interesting about the brand differences. I just read a taste test yesterday where they said Chaokah brand (that I used) is a bit less sweet and good for savory cooking. I wonder if some have a higher sugar content? Oh well…too many questions for another day! Thanks again and have a great week.

    I wish we only had a few more week of summer in Arizona, but unfortunately our summer usually lasts until October. But maybe that is a good thing because that means I can eat ice cream sandwiches for a few more months! These look so amazing and I really love the idea of using banana bread for the sandwiches!     I love your new blog look, Kelly, it looks minimalistic and as lovely as you! Ah, these ice cream cookie sandwiches are magnificent…I started using the new ice cream maker this week and made two sorts of coconut ice cream: Irish Whiskey and Salted Caramel.     Have I been under a rock?!? Cause these look AMAZING, Kelly. Truly. Such great flavors. I feel you with Summer and being into ice cream sandwiches…especially homemade ones.
